Songbird Sweet Potato Skillet

Ingredients

Topping

1/3 cup firmly packed light brown sugar
2 tablespoons Martha White® All-Purpose Flour
2 tablespoons butter (softened)
1/4 cup chopped pecans

Filling

6 ounces cream cheese (softened)
3 tablespoons sugar
1 large egg

Cake

Crisco® Original No-Stick Cooking Spray
2 (7 oz.) packages Martha White® Sweet Potato Muffin Mix
1 1/2 cups buttermilk
2 tablespoons melted butter

Instructions

HEAT oven to 325ºF. Spray 10-inch round cast iron skillet or 9-inch square cake pan with
no-stick cooking spray.

Topping

STIR all topping ingredients together in small bowl until mixture resembles coarse crumbs.

Filling

BEAT cream cheese and sugar together in medium bowl until smooth. Add egg and beat
well.

Cake

STIR together all ingredients in medium bowl just until smooth. Pour into prepared
skillet. Spoon filling over batter. Swirl with knife bringing some batter to the top.
Sprinkle with topping.
BAKE 30 to 35 minutes or until light golden brown. Cook on wire rack. Serve warm or at
room temperature. Store in refrigerator.

Notes

Alternate ingredient: Martha White® Apple Cinnamon Flavored Muffin Mix or Martha White® Apple Cider Flavored Muffin Mix may be substituted for Martha White® Sweet Potato Flavored Muffin Mix
