Ingredients

1 pound ground pork sausage (mild or hot)
2 cups shredded cheddar cheese (8 ounces)
2 cups all-purpose baking mix (like Bisquick)
1 (8-ounce) block cream cheese

Instructions

Preheat oven to 400°F. Line two sheet pans with parchment paper or aluminum foil for easy cleanup. Lightly spray with nonstick cooking spray if using foil.
In a large bowl, use a mixer to combine the cream cheese and sausage. Add the baking mix and mix well. Add the cheese and mix until just incorporated.
Portion out about 1 tablespoon of the dough and roll each one into a ball that's about 1-inch in size. I like to use a #50 scoop for this. Spread the balls over the two sheet pans.
Bake for 12 to 15 minutes or lightly brown and until cooked through. The internal temperature should be right at 165°F.
