Pesto Shrimp Pasta

Ingredients

  • 1 (12-ounce) package spaghetti
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic
  • 1 1/2 pounds peeled and deveined medium shrimp
  • 1/2 teaspoon salt
  • 1/4 teaspoons black pepper
  • 1 cup whipping cream
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup refrigerated, prepared pesto

Instructions

  • Cook the pasta according to the package directions and drain. Reserve about 1/2 cup of the pasta water before draining. Do not rinse.
  • While the pasta cooks, add the butter and oil to a large skillet over medium heat. Once the butter is melted, add the garlic and cook for 1 minute. Sprinkle the shrimp with the salt and pepper and add them to the skillet. Cook until the shrimp become opaque and cooked through. Remove the shrimp from the pan and set aside.
  • Add the whipping cream to the skillet and heat to a simmer. Stir in the Parmesan cheese and the pesto. Cook 3 to 5 minutes over low heat.
  • Add the shrimp back to the skillet and toss with the sauce. Add the pasta back to the skillet and toss to coat. If desired, gradually add the pasta water, one tablespoon at a time, until the sauce is at a consistency you like. Serve immediately.
